Roasted and Curried Butternut Soup:
Although it may seem like effort on glance, the taste and benefits truly outweigh the costs!
Ingridients:
- 1/2 butternut Squash
- 5 cups of vegetable broth
- 1 garlic head
- 2 onions, diced into quarters
- 1 tsp dried oregano
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp brown sugar
- 1 tsp curry powder
- 1 serving of plain yoghurt
- parsley to flavour.
Directions:
- Preheat oven to 175C/350F. Prepare a baking sheet
- Place Butternuts and onion quarters on the sheet. Wrap some foil around the garlic head, and place vegetables around.
- Cook for approx. 50 minutes, until the butternut becomes soft. Take it out and wait for it to cool.
- Take the garlic out of the foil and squeeze into a food processor. Take the flesh from the butternut along with the onion and add them too. Mix until smooth: Add the broth if consistency is too thick. Otherwise, when smooth, take out and add the contents into a pot and stir with the vegetable broth. Add the seasonings listed in the ingridients to taste! Enjoy!
Delicious Turkey Chili
An easy, quick meal which will maintain freshness for days.
Ingredients:
- 1 can of tomatos, crushed
- 1 can of mashed kidney beans
- 1 pound of ground turkey
- 1 diced onion
- 1/2 tsp ground cayenne pepper
- 1/2 tsp ground cumin
- 1 TSP minced garlic
- 2 TSP chili powder
- 1 tsp olive oil
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups water
Directions:
- Turn heat to midway, and spread oil around pot. Place the pound of turkey into the cooking pot until browning. Add onion and continue cooking until soft.
- Add water to pot. Throw in the beans, minced garlic and tomato. Finally, Season with paprika, dried oregano, salt, chili powder cayenne pepper, cumin, and pepper. Heat all the contents until boiling. Simmer for half an hour, and serve!
